Treated 5.25 gallons of water with campden tablet, then heated 3.75 gallons, added baking soda and yeast nutrient, then added sugar, completely dissolving before returning to heat and bringing to boil. Added diced up ginger, hibiscus, and kaffir lime leaves for the 10 min boil. Then left the flavorings in the water while it cooled in an ice bath down to 76 degrees.
