Special Instructions

1.
Steeped flameout hops starting at 190F for 30 minutes. 170F when removed.
2.
Made a yeast starter with previous wort and recovered 1318 and S04 yeast from trub.

Notes:

Tropical fruit flavor, like a mango-pineapple punch but not overwhelming. With a good slightly bitter hop finish. Although ~7.5 ABV there is no taste or "heat" of alcohol. Dangerous! Nice light color and moderate haze. Fine frothy head and good, but not too thick mouth feel. I reduced my original addition of 8 oz lactose to 6 oz. I think it was a good call, I don't like sweet beer. I think the lactose was a good addition to the balance of the brew. When I make this again, and I will, it will be 4 oz and the beer will be perfect to me.
