Special Instructions

Pitch yeast at 60

Once fermentation begins, drop temp 1*/hr to 50-55

After 2 weeks raise temp to 62* and hold 2-3 days
4.
Rack beer into secondary once fermentation is complete
5.
Cool to 30 degrees over 2 days
6.
Mash at 152* for 90 minutes
