Brew No.4 Do again. Yes. But with right hops and peel. 8/10 - Paul's recipe. Tasted amazing! Fruit flavours. Didn't use peel or dry hop. No Nugget so used Citra Brew No.5 7/10 - Brewed again. Used random hops, not as good, completely different. But got a lot better with age. OG 1066. FG 1011. 7.2% Attenuation - 83%

Special Instructions

1.
Take yeast out of fridge
2.
ChemSan Sanitiser (10ml per 5 litres) (70ML - 35Lt) - Fermenter, tubes, air lock, therm, scissors.
3.
Water to Mash kettle. 16.14Lt
4.
Water to Sparge Kettle 17Lt
5.
Camden tablets to Both - 3.5 to Mash, 3.7 to Sparge. (5 Tabs per 23Lt)
6.
AMS to both - 14ml to Mash Kettle - 15ml to Sparge Kettle (22ml per 25Lt)
7.
DWB to mash kettle only 8.4g (13g per 25Lt)

Set mash kettle to 73C

Add mash bag.

Add mash. Temperature to 65C - Mash for 75 mins.

Set sparge water temperature to 77C

Turn off mash kettle

Volaut

Drain wort into bucket
17.
Add sparge
18.
Leave for 20 mins to rest
19.
Add this sparge liquor to wort - Discard mash

Add total liquor back into mash kettle - Boil for 60 mins

Add hop spider

START OF BOIL - Add 5g Target

30 MINS - 15g Nugget (Citra) 15g Cascade
24.
45 MINS - Add Protafloc 1/3 of tablet (Half tablet per 25Lts)
25.
50 MINS - 25g Target 25g Pheonix 15g Cascade 15 Nugget (Citra)
26.
Add cooling coil for last 10 mins of boil
27.
Turn off Kettle. Remove Hops
28.
Cool wort to yeast pitch.
29.
Pull Fermenter handle TIGHTLY closed! Unscrew bottom pot clockwise!

Hydrometer target - OG 1066

Store fermenter at 19C

4 DAYS BEFORE BOTTLE - add hops and peel in sanitised hop spiderr:

50g Pheonix, 50g Cascade 50g Nugget (Citra)

5g Grapefruit 5g Orange peel soaked in Vodka for 3 days

Chemipro. Warm Water (4g/1Lr) (140g - 35Lt) Bottles. Syphon Tube and tap.
39.
Clean Mash tun to fermenter tube. Spare fermentation drub container. Black stoppers. Airlock.
40.
ChemSan Sanitiser (30ML - 15Lt) (60ml per 30Lt) - Syphon Tube & tap, caps, bottle machine.
41.
Sugar - 15Lt beer/30 bottles - 84g sugar - 150ml water - 5ml per bottle
