Notes:

99 Days after being cellared (which was 19 days after bottling). The cellar was at a balmy 64F when I drank this, no cooling. This may be one of the most beautiful beers I have seen. Reddish brown and clear as a bell, a creamy beige head clings mercilessly and invites the imbiber's pleasure. The Palo Santo is still wickedly present in the aroma but has softened as far as I can tell. Strange and foreign spices waft into my nose. Wowie, this beer has mellowed nicely, there is no boozy burn, just a wonderfully spiced wood character that mingles well with chocolate. The lacing is superb. There are so many subtle things going on here, vanilla, charred wood, chocolate, spices galore. The carbonation adds to the divinity of this almost Root Beer-like beast. My kind of sipper.
