Special Instructions
1.Collect 16 gallons of water and add minerals.
2.Mash at 149F for 90 minutes with 6 gallons/6oz of 164F strike water.
3.After mashing, add 2 gallons, of boiling water raising temp of mash to close to 168F.
4.Recirculate wort until runs clear. Begin sparging with remaining 7.8 gallons of sparge water for a 30 minute mash out.
5.Pre-boil volume should be at 13.5 gallons. Boil for 90 minutes adding hops, yeast nutrient, Irish moss per schedule. Cool wort to 50F and pitch yeast.
6.Ferment at 50 °F (10 °C), ramping up to 60 °F (16 °C) towards the end of fermentation for a diacetyl rest.
7.Once complete, lower back down to 50F and transfer to keg. Lower temp slowly by 3 degrees a day until reaching 35F. Lager at 35F for 6 weeks.
