Special Instructions

1.
Collect 9.25 gallons of water. Add 4 grams Gypsum, 3 grams Calcium Chloride, 2 grams Epsom Salt.
2.
Mash low at 151F for 60 minutes with 5 gallons, 54 oz of 165F strike water. No mashout.
3.
Vorlauf until wort runs clear. Run off 3.5 gallons of wort.
4.
After runoff, add 3.75 gallons of 185F water. Stir and allow to rest for 5-10 minutes. Recirculate until wort runs clear. Run off 3.75 gallons of wort.
5.
Collect 7.25 gallons of wort adding the FWH and boil for 60 minutes. Add hops and scheduled. Add yeast nutrient with 10 min left in the boil. Add 1/2 whirlfloc tablet with 5 min left in the boil.
6.
Primary for 10-14 days at 72F. Secondary for 2 weeks adding dry hops during last 7 days.
