The yeast that I used was discounted due to age, October manufacturing date from Wyeast. It took 2 steps up to get it to really hum.Efficiency was crazy high. I must have purchased more grain than I thought as I calculated above 100% efficiency so I just adjusted the amount of pilsner and efficiency to compensate.
