The yeast that I used was discounted due to age, October manufacturing date from Wyeast. It took 2 steps up to get it to really hum. Efficiency was crazy high. I must have purchased more grain than I thought as I calculated above 100% efficiency so I just adjusted the amount of pilsner and efficiency to compensate. I did mash for about 3.5 hours so that probably accounted for much of the high efficiency. The acidulated malt worked well and made it so that I didn't have to add any acid, so I will look to use this more in the future. Other than that, easy brew day. I did aerate for 1 minute prior to giving the wort a yeast infection.

Notes:

Pours 1 finger of foam, golden in color, fairly clear. Aroma is typical pilsner - wheat and grapes - along with a bit of fruitiness. Flavor follows aroma but there is a slight bite at the end, not really bitterness but more of an acid crisp edge. Body is thin to medium and nucleation isn't sharp at all. Overall the flavor is perfect for what I want in a pilsner, which is mostly due to the yeast. The lack of real carbonation sucks and I don't understand it because I use carb drops. In any case, 3 out of 5 stars because, while the flavor is great, the carbonation really detracts.
