All Grain American Wheat Beer homebrew recipe. This homebrew recipe uses the following ingredients: 2-Row - US, White Wheat - US, Cascade Hops, White Labs Hefeweizen IV Ale WLP380 Homebrew Yeast, Whirlfloc Tablet (15 Min), Apricot.
2.After primary fermentation is over add apricot puree to the fermenter: I did a split batch Apricot and Mango. About 2kg per 5 gal (I overshot slightly with mango)
3.Single infusion mash and fly sparge. Sparge water to be 170?F.
4.Mash thickness to be 1.5 qt/lb.
5.Yeast starter was used, but only to check the viability of the yeast. ADD YEAST NUTRIENT! 2 cups water, 1/2 cup DME.
The apricot fermented with Voss turned out great! Remained pleasantly wheat-like while having a nice apricot note. On the other batch with mango, the batch had a little too much mango, so it's hard to taste all the complexity of the beer. Still enjoyable, but need to cut down on the mango for next time.
