I've brewed this from a Pacifico Clara Clone recipe I have; however the grain bill originally called for 6.75 lb of 6-Row. Also, this was for a 5.5 gallon recipe; I wanted to make these changes to increase the octane a bit. I haven't brewed this yet with this much 6-Row.
However, the 2 times I've brewed this (once bottled, once kegged) have turned them out delicious. Using the Key Lime juice versus regular lime juice gives it a nice twist of sweet to go with the sour.

Special Instructions
1.Steep 6-Row and Flaked Corn in 2.99 gallons water for 60 minutes @ 154F. Strike Temp needed if grains are at 70F is 166.63F
2.Sparge with 5.54 gallons water @ 154F to give you a Pre-boil Wort of approx. 6.37 gallons.
3.Add the Brown Rice Syrup at the beginning of the boil.
4.Add the Whirlfloc Tablets and Key Lime Juice at 10 minutes left in the boil.
5.Cool to 72F and pitch the yeast. Because 34/70 is being used, it can ferment at 66-72F.
6.Do Secondary Fermentation (if desired) on Day 5.
