Special Instructions

1.
Ferment at 67-68 degrees for 3-4 days and then raise to 172 to finish
2.
First dose dry hop is suggested to add at gravity of 1.028. Other suggest at high krausen. I may add them between day two and three.

Second dose dry hop should go in just before fermentation is complete 1.020
4.
Add 5 oz acidulated malt to grist (.3125 lb)
5.
Strike water 5 gallons / Sparge water 5 gallons / treat each with 6 grams calcium chloride and 2 grams gypsum (for sparge you can add 3 grams cal chloride to sparge water and the other 3 grams to the boil
6.
Mash ph should be about 5.4 at room temp
7.
Whirlpool hops at 170 for 15 minutes (shown above as flame out)
