Strike Temperature: 158 F. Aerated wort for 40 seconds with pure oxygen. Rehydrated dry yeast and pitched into 61 F wort. 86% Efficiency! Airlock activity in 23 hours. 4/24 Fermenter temp of 75 c with lots of airlock activity. Put fermenter in 57.5 F basement. 4/25 Fermenter cooled to 62 F and no airlock activity.
