Boiled water. Put in corn. let soak for 5 hrs. Cornmeal was 1.05 then added the sugar and it brought it up to 1.068. Flitered corn out. added grain at 104 degress (added Beta Amalase with around ph 5). held for 40 min. took it to 140 and held for 40 min. brought it to 160 and held for 1 hr. (upped ph to 5.7 and added Alpha Amalyase).
