Special Instructions

1.
Mash 3.78 gallons: 1.5 grams gypsum: 1.5 grams calcium chloride
2.
Sparge 3.96 gallons: 1.6 grams gypsum: 1.6 grams calcium chloride
3.
Mash/Sparge as normal then pasteurize at 170f for 10 minutes. DO NOT ADD HOPS
4.
Chill Wort to 90f

Pre-acidify the wort to 4.5 by adding small amounts of lactic acid until desired number is reached (2.5 ml to start)
6.
Pitch 3/4 carton (24 oz) shaken Mango Goodbelly into wort.
7.
Place cling wrap on top of wort as best you can and seal top of kettle with cling wrap
8.
Set temperature to 85.
9.
After 18-24 hours take a pH reading. Target is 3.2 - 3.5
10.
Once target pH is reached then boil for 60 minutes and add hop addition
11.
Pitch 2 packets of US-05 due to lower pH
12.
Ferment for 10-14 days at 68 f
13.
Rack to secondary on top of fruit and age for at least 1 week
14.
Cold crash and keg as normal
