A trial and error recipe that I think I've now got almost spot on after 3 years of trying. Target water is Burton Upon Trent @ Ca2: 270, Mg2: 41, Na: 113, Cl: 85, SO4: 720 and HCO3: 270. Starting mash thickness was 1.5 litres/0.5kg. Liquid yeast used. Attenuation average @ 75~76%, flocculation - medium, optimum temperature 20~23.5 Celsius and fermentation temperature 22 Celsius. I use a single vessel system with a Brauduino controller. Now I need to work on the ABV and get it down to between 5.3 and 5.6%
