1.Treat the water to ~160/80 chloride to sulfate ratio and treat for proper 5.4 ph
2.Mash all grains at 155F for 60 minutes
3.2 oz columbus hops in boil at first wort
4.At the very end of 60 min boil we will add amarillo/mosasic/cascade
5.We will then chill down the wort to 160 degrees turn off wort chiller and apply the 8 other ounces amarillo/mosasic/cascade for a 20 minute whirlpool
6.Then will turn the wort chiller back and add oxygen until we hit our pitch temp of 62 let it settle out at bottom and transfer to the fermenter
7.Ferment at 66 for 3-4 days
8.Add 1 oz of Chinook as first ferm hop
9.Raise Ferment to 68 for remaining days in 2 day increments
10.Dry Hop #1- At day 5 - add the following to primary fermenter when becomes less active: 2 oz. Amarillo - 2 oz. Mosaic 1 oz. - Cascade
11.Dry Hop #1- At day 10 - add the following to primary fermenter: 2 oz. Amarillo - 2 oz. Mosaic 1 oz. - Cascade
12.At Day 14 transfer onto hops without hop sock - 2 oz. Amarillo - 2 oz. Mosaic 1 oz. - Cascade
13.Day 16 - cold crash
14.At Day 17 - Close Transfer to Finishing Keg for Carbination
