A temperature around 150 to 154 °F (66 to 68 °C) creates wort with a nice balance between fermentable and non-fermentable sugars. Use a lower temperature when using lower attenuating yeasts or higher starting gravities. Use a higher temperature when using higher attenuating yeasts or making lower gravity beers
