Special Instructions

1.
Heat 13.5L water to 73
2.
Mash Munich and crystal malts at 155°F (68°C) for 40 minutes, or until Munich malt reaches conversion.
3.
Stir in the DME and top up water to bring to 15L
4.
60 min boil w/ 2 hop additions, yeast nutrient and whirlfloc
5.
Steep flameout hop addition 10 mins
6.
Quikly cool by topping up with 8kg of sanitary ice to 18.5L
7.
Whirlpool then settle for 20 mins
8.
Transfer to fermenter and aerate with aeration stone
9.
Ferment & condition at 19.5°C for 4 weeks
10.
Dry hop in primary for 5 days after fermentation has finished
11.
Bottle, prime and condition at 19.5°C for 3 weeks

Notes:

A very tasty beer. The strong hop scent fills the room when you crack one of these bad boys. Mangoes and grapefruit, pine needles. What a mouthful! There is quite a bitter aftertaste, I put this down to hopping for longer than intended (almost 3 weeks!), though thought that dry hopping shouldn't increase the bitterness... Still very drinkable!

Notes:

Tasted this as it was being bottled.. OMG this is delicious! As I'd cold crashed it to 0°C, the beer had a slight carbonation to it, which provided a nice and delicate mouth feel. The hops are pungent and a give a strong tropical scent, like mangoes. Sip... BOOM, very hoppy, pine needles and a very long finish, though a little bit more bitterness in the aftertaste than I wanted. Can't wait to try it again in a couple of weeks...
