Special Instructions

1.
add all grains and stir hot water into mash tun, cover and mash @ 153°F
2.
batch sparge another 5gal of 170°F water after initial 5gal has been poured into boil kettle, until it runs clear
3.
once all water has been passed through grain, begin boil to 212
4.
pre-boil gravity = 1.046 (46 green) when cooled
5.
boil for 90mins total, adding hops in steps below
6.
once boiling for 30min , add first round of hops (60min)
7.
continue to add hops @ times listed, total boil is 90min
8.
cool wort and transfer to fermenter
9.
pre-ferm gravity = 1.060 (60 green)
10.
aerate wort and pitch yeast
11.
ferment at 68 °F, once it falls clearish (about 2 weeks)
12.
add dry hops in bag in primary fermenter, for 7 more days
13.
using muslin bags on each end of siphon, move beer to secondary fermenter (leaving about an inch of beer above sediment)
14.
boil 4oz of corn sugar in 2 cups of water, cool and add to bottling bucket, stirring gently
15.
using muslin bags again on each end again, siphon to bottling bucket
16.
bottle and let sit at least 2 weeks @ room temp/darkness
