Special Instructions
1.Mash at 149F for at least an hour, up to 90 minutes
2.Mash at 1.3 quarts per pound
3.If going to re-pitch yeast, use from a 1.050ish beer (pale ale)
4.Do starter, even if doing a re-pitch, to wake up yeast
5.Add oxygen at start, and another at 12-18 hr. after pitching
6.Ferment at 67F, towards end ramp-up to 70F to get attenuation
7.Start ramping up when you notice fermenation slow
8.Hold at 70F for a week when you reach that temp.
9.Age in secondary for a few weeks
10.Needs to be keg aged for at least a year, at 50F max (40's F)
11.Do not bottle carbonate if aging in bottles, carb in keg 1st
