Special Instructions

1.
At beginning of brew night, grind the midnight wheat and add ~1/4 gallon of cold water. Place in fridge until end of boil.
2.
Mash at 152F for 1hr (all but the midnight wheat)
3.
Boil 1hr, add irish moss at end of boil.
4.
Pass the midnight wheat slurry through a french press, add the steeped liquid to the wort just prior to transferring to primary.
