Special Instructions

1.
Start with 7.75 gal of water, heat to strike temperature of 160 degrees.
2.
Add 1.5 teaspoons of gypsum to strike water and allow to desolve before adding the grains.
3.
Add all grains and mash for 60 minutes--goal of 153 degrees.
4.
Bring wort to boil for 60 minutes: add Perle at 60 m, Willamette at 45 m & Cascade at 5 m.
5.
Add wort chiller at 15 minute mark to sterilize prior to use.
6.
Add 1 Whirlfloc tablet at 10 minutes left of boil (50 minute mark).
7.
Chill wort to pitching temp. per package instructions, take OG reading and then add yeast.
8.
Take FG reading before bottling/kegging to calculate ABV.
