Special Instructions

1.
Start fermentation around 70 to let it get going, then decrease temp to 55 and hold for 2 to 5 days or once fermentation has slowed and almost stopped.
2.
Gradually allow the temp to rise to 65 for diacetyl rest and hold for a few days.
3.
Over 3-4 days drop temp to 35 and hold a few days before transferring to keg so fermentation chamber can be used for next brew. If possible store keg at 35 for 6 to 8 weeks and carbonate to around 2.6 volumes..
