Special Instructions

1.
April 15/22: Mashed in with 14L, 2ml lactic acid and 2.5g each CaCl2 and CaSO4
2.
Hit 66C, 45 minute mash.
3.
Sparged with with 20.5L, ~3.5ml lactic acid and 3g each CaCl2 and CaSO4
4.
Sparge water at 83C, mashbed at 58C, mashout at 72C.
5.
April 15/22 1pm: Pitched into wort at 19C. Into FC set to 16C to start. Quite a bit of trub made it in.
6.
April 15/22 6pm: FC down to 14C to stall fermentation until second batch.
7.
April 16/22 1pm: FC back up to 16C as Loggo 189 joins. No activity yet.
8.
April 17/22 7am: Beers looking the same, bit of scuzz on top. 3470 was 16C. FC down to 12C.
9.
April 17/22 9pm: Both beers at relatively the same krausen, 3470 a bit ahead. 13.5C laser both.
10.
April 19/22 645am: Fermenting vigorously for a lager, laser reading 13.5C
11.
April 21/22 645am: Both beers looking the same with laser at 13.5C
12.
April 23/22 6pm: Both beers moved to the freezer FC set to 15C.
13.
April 24/22 1pm: FC up to 17C, both beers have a thin krausen.
14.
April 25/22 7am: FC up to 18C, both still have a thin krausen. Laser at 18C on heat side.
15.
April 26/22 6am: FC up to 20C, thin krausen.
16.
April 27/22 6pm: Laser beer at 21C both.
17.
May 2/22 830pm: Unplugged heat to begin cooling.
18.
May 22/22: Bottling day! 4.95oz dextrose to 18.75L at 21C for 2.67 volumes.
