Mash Steps

Special Instructions

1.
Collect 4.5 gallons of strike water. Heat to 170 degrees.
2.
Mash in at 154 degrees. Cover and sit for 1 hour.
3.
Collect 6 gallons of water in hot liquor tank at 172 degrees. Start Lauter.
4.
Slowly collect draff in pitcher. Recycle back into mash tun until wart is clear.
5.
Sparge mash at 1 quart of wart per minute. Should take around 30minutes.
6.
Will need 7 gallons of wart for boil.
7.
Check Gravity.
8.
Boil for 90 minutes. Add .75 ounces of Magnum hops at boil.
9.
Add .5 ounces of Citra and Mosaic with 15 minutes remaining.
10.
Add .5 ounces of Citra and Mosaic with during whirpool.
11.
Whirlpool .5 ounces of Citra and Mosaic.
12.
Let settle for 15 minutes.
13.
Chill to 70 degrees. Transfer to carboy ferment for 4-5 days.
14.
After fermentation transfer to secondary and dry hop for two days. .5 Citra .5 Mosaic
15.
Cold crash for at least two days. Rack into keg for five day CO2 starting at 15 PSI.
