Water Adjustments: http://www.brewersfriend.com/mash-chemistry-and-brewing-water-calculator/?id=8QGTX6X 151F at mash in 148.8F at 30 minutes, conversion almost complete per Idophor test First running 1.045 at 132F (corrected to 1.058) F'd up the batch sparse. Valve was open so that addition went right through the grain, must have lowered efficiency, since most (2/3) of the sparge water didn't have any time to sit. Pre boil gravity was 1.043, boil off was low, so OG into the fermenter was 1.050. Pitched WL007 harvested from Bitter. Not much activity at 12 hours, very slight activity at 24. Added 3/4# of Pilsen DME in 1qt of water to make up for low efficiency. Est. Original gravity 1.056 Yeast was slow to start, but showing signs of activity at 24 hours and good Krausen at 36 hrs Added 1oz Citra, 1oz Galaxy, 1oz Hallertau Blanc as a "Primary Dry Hop" at 48 Hours Checked gravity on 3/8/17, read at 1.008 (corrected to 1.009) Racked to secondary on 3/9/17 onto .5oz Citra and 1oz Hallertau Blanc Racked into keg on 3/14, sharp back of the mouth bitterness has faded slightly. Still has amazing fruity hop aroma. --- Kicked on 3/23 --- bitterness faded over the week and half this was on tap; aromatics stayed really present

Notes:

Bitterness mellowed from previous tastings and ended more balanced. Drank more like a very hoppy pale ale than session IPA. Still full of tropical fruity flavors and aromas

Notes:

Big tropical fruit aroma... mango, passionfruit, lemon, melon. Session IPA-ish body, very dry with a bit of astringency at the finish.
