nice and black, with a gorgeous tan head slight fruitiness coming from the apollo, also a nice piney note from the simcoe. there is also a roasty coffee note in the aroma, hints of dark chocolate the hops are a little subdued in flavor from the nice roast and coffee flavor the midnite wheat presents. also there is a nice astringent bitterness, very assertive like. quite tasty the midnight wheat brings forth a nice creaminess that helps hide the decreased viscosity a sipa is known for. creamy on front, nice and light at the end this is the best beer i've created to date. such depth of flavor, yet everything seems to meld into one nice dark colored, high hopped brew.
