(Include any important notes from brew day until tasting)
Started 800ml (~2 pints) yeast starter night before pint wort plus pint slurry
5 G strike water 4 G sparge (Next time 5G 5G)
strike at ~170F Mash at ~150 for 60Min
Resulted in 6.5G wort @ 14 Brix
Boiled to 6G @ 15 Brix
Resulted in 5G usable. Next time use additional G. Maybe set second hop additions at 10M (from 5)
Set thermostat to 62. Pitched several hours later at 85F. (too hot, need better chilling techniques)
9/4 Cooled down to 74 overnight with some minor signs of activity.
9/5 Cooled down to 64 in the morning. Steady bubbling now.
9/6 raised thermostat to 65F.
9/8 Still Airlock Activity

Gravity Estimates
Based on boiling 6.50gallonsliters at 1.057 for 60 minutes, this will decrease your wort by 0.50gallonsliters, bringing your after boil OG to 1.061.
You wanted an OG of 1.062. It looks like it will be under.
Appears to have "bittered" up. Very hoppy (late additions and 4oz dry hops gave great fresh hop flavor). Maybe too much Cascade. Subsutute half of cascade for Centennial.
Comments
Could use a little more bittering. Also need additional post boil volume (6G from 5.5) as I loose .5 G each step.
