Placeholder for Cinnamon Apple Cider brewed for Brewtoberfest Oct 9, 2021. 4.5 gallons apple juice, 1 lb dextrose, 12oz. molasses, one tablespoon Wyeast yeast nutrient, Will backsweeten with frozen concentrated apple juice before bottling. Took gravity reading today it's at 1.000 ready for bottling. Bottled today with 8 oz of homemade cinnamon stick/vanilla bean extract and 5 12-ounce frozen apple juice concentrate, this bumped the gravity to 1.020 before bottling, I"ll pasteurize once this is carbed up and this should leave me in the 1.012-1.014 range for final gravity. Semi-sweet roughly, cider was very clean and tasted nice and dry before these additions, with no off flavors. This will end up in the 9.1% ABV range. Pasteurized this on 10/3/21 ended up with 54 bottles of cider, will cold condition for a few days before the event.
