used the last of my 2017 homegrown cascade hops.
Added .5 gallons boiled (and chilled) water to carboy to fill back to 5.5 gallons. Adjusted vol/efficiency to estimate OG based on OG reading taken from original 5 gallons collected after the boil.
reused kolsch yeast (unwashed) started fermenting 24 hours later. Avg. temps in mid 50s during first 3-4 days, raised to 60's for next 1.5 weeks.

Gravity Estimates
Based on boiling 7.50gallonsliters at 1.046 for 75 minutes, this will decrease your wort by 1.25gallonsliters, bringing your after boil OG to 1.054.
You wanted an OG of 1.051. It looks like it will be over.
