Preboil gravity of 1.0586 if 6 gallons to start boil, and then 1.0542 if 6.5 gallons to start boil. Pycnometer weighs 12.415g with water on mg scale, pycnometer alone weighs 8.043g, so I will proof it today against the hydrometer. Had to reheat mash up to 153F halfway through die to how cold the garage is. Mash dropped to 147F in first 30 minutes. Pulling 1.067 on the hydrometer, weighing 12.662g on the pycnometer for a gravity of 1.0565, so it's off due to lack of temp correction capability. I'll try it again once after the boil but this pycnometer isn't working for me yet, even with a mg scale. Preboil gravity pulled 1.048 with volume of about 7.15 gallons. Final gravity on the hydrometer was 1.060 while the pycnometer weighed 12.698g to give an OG of 1.0647. I feel that the pycnometer is correct here so I will go with that value. For the water infusion, I think that I will decrement the sparge water by 0.5 gallons to prevent too much lautering and watering down of the wort, causing me to boil longer. In this brew, I had to go larger on the preboil volume and really amp up the heat to boil down to my desired final volume. I can fix this by using 85% efficiency in my recipe calculations, especially in the winter when the garage is so called and really screws with mashing temps. I had about 350mL of yeast slurry, filled to 1.6L on my flask with cooled wort and dumped 800mL into each carboy I'm using; I decided to split the 5.5 gallons across a 6 and 5 gallon carboy as I didn't want to bother with blow over. Aerated both carboys 30 seconds. Stall lasted until 10pm, ramping slowly. 11/18/17 - Primary fermentation is complete. High krausen was about 3 inches at most, occurring about 12 hours after pitching. There's still quite a bit of foam and yeast in suspension, but the airlock has essentially stopped moving. 11/30/17 - In primary, clarifying pretty well so I'm going to go ahead and bottle. Priming to 2.4 volumes by way of 2.3oz dextrose. I will bottle hop half the beer with 0.5oz Simcoe cryo hops. The 2 gallon carboy pulled 1.013 for final while the 3 gallon carboy pulled 1.017. I'll split the difference and call it 1.015 for FG. Sample tasted okay, not as bitter as the CHUH-nook but nothing really redeeming, almost a sour note to it. I bottle hopped with 0.5oz of cryo Simcoe and Chinook hops, so I'm hoping that rounds out the flavor. Based on what I'm tasting, Chinook hops are for 10 minute additions, about 1.5oz to get the bitterness that I like.

Notes:

Pours orange/caramel color with half a finger of foam that lingers. Aroma is malty sweetness and tropical fruit, mango. Flavor is malty sweetness and light tropical fruit with a very light, boozy finish that carries some of the Chinook bitterness on it. Body is on the heavier side and carbonation is spot on. Simcoe hops are the most apparent flavor and dominate the beer, especially compared to the Chinook. Not a bad pale ale, but it's not one that I would make again as it comes across with a sort of candy sweetness.
