Used tap water. Used 4# of base malt vs 3.75# in recipe. Start 60 min mash @ 154 end 152. Used a bit more water than in recipe and hit 1.050 og. Added 1 lb honey after boil when wort was around 160 degrees. Pitched around 75 degrees. Fermenting at 56 degrees.Raised to 63 degrees for Diacetyl rest after active fermentation stopped (about day 5). Moved to secondary on November 4 (18 days) FG was 1.009. Reported ABV 5.4%. Followed recipe for grain and hop additions. I used tap water for first time for this beer. 3 gallons in Mash with 1.5 gallons for a dunk sparge. Mash brought up to 157 and let it set. After 30 minutes, mash was 152. Final mash temp 151.Cooled with immersion chiller to 70. OG was 1.053. O2 for 24 seconds. Pitched dry yeast packets (2-11gram). Raised for Diacetyl rest on day 8...held for 6 days. Transferred to carboy for cold crash (Aug 27). FG was 1.016. 4.9 ABV. Kegged on Oct 6 - ...
Activity in airlock is not spectacular in 24 hours. Very consistent with mash temp. Aeration with pure O2 for 36 seconds. Pitched dry. Fermentation at 55 degrees. ___________Fermentation seemed to take off at 24-36 hours. Good airlock activity for 3 days. Raised temp to 63 degrees on day 8.__________I can't remember how long for diacety rest...maybe 4 to 6 days. FG was 1.012. kegged. Haven't tasted carbonated yet but it seems spot on for what I was shooting for.Very good results. ...
BIAB. Mashed in 3 gallons at 152 for 60 minutes. Dunk sparged in 1.25 gallons at 170 for 10 minutes. Did not squeeze bag. OG was much lower than Target at 1.042. I think I should have done 6# total grain for 1.052 OG....will try that next time. Pure O2 for 36 seconds. BIAB - mashed in 3 gallons @152 for 60 minutes. Dunk sparged in 1.5 gallons @ 170 for 10 minutes. Combined wort. Approx .5 gallon loss to grain absorption. Boil approx 4 gallons for 60 minutes with hop schedule. I hit OG exactly with 1.052. Fermented at 55 degrees until March 18 (12 days). Raised temp to 62 for 2.5 days.
