Left in primary for 20 days as this yeast was slow to finish. I added 2oz Citra, 2oz Cascade and 2oz Centennial in a dry hop tube for the last 8 days. 3.31 I racked to two smaller tanks. Cold crashed one tank with 2.5 gallons. I added 2 lbs. vodka sanitized chopped Jalapenos to the other tank. I am going to let the Jalapeno tank rest for two weeks. I funneled the vodka back into a bottle for Bloody Mary's! It was electric green and spicy!
I split the batch. 3 Gallons in secondary left alone for 2 weeks. The other 2 gallons I added 4 lbs. of fresh organic Raspberries for 2 weeks.
Mashed at 152 first 5 minutes and ran cold water to get it to 148. Temp dropped fast to 144-143. I forgot gypsum in strike water so I hit 1 tsp into 185 degree sparge 4.89 gallons. I skinned and diced 1 oz fresh ginger for last 15 minutes of boil. I ended up with almost 8 gallons runoff. I also added the Centennial and Amarillo hops at 15 minutes left rather than burnout as this was a 75 minute boil.
