Take 2 for the house ale. First attempt didn’t have the hop aroma or flavor I wanted. Kind of flat. Still aiming for something drinkable all year round Want something I can taste the ingredients I used. Concerns: Efficiency was off when number one was brewed. This time adjust the efficiency percentage and change the grain bill accordingly. Did you choose wisely on the crystal 20/40? First attempt was a little sweet...but maybe that’s not a speciality problem so much as a hop problem. What flavor did these hops give? Do you like it? Eh. But that may have also been a top off water problem. Still, let’s change the Centennial with the higher alpha to bittering only and push the flavor aroma additions later in the boil to just cascade. Let’s set what the difference is. Your thought right now is that Cascade has some higher aroma and citrus flavor. The goal here is to build a basic APA and work off of it from there. Don’t go above 150 on the mash and see what happens Rehydrate the yeast and see what happens-does this make the final product less sweet? It may have. Number one didn’t have that ester off flavor. It’s worth doing this again to see if it’s still a solid mash number to keep. What was the color like? Decent and I liked it. However, top off water-don’t do it again. That changed it. Did you hit the water calcs?-no you didn’t...make sure you do a full calibration on the outside system before you brew this. Adjust the water calls here before you brew.
