Bring water to 100 F. Add Grains (each in a muslin bag) and let sit at 100-115F for 20 minutes.

Bring Temperature to 150 and hold for 30 minutes.
4.
Bring Temperature to 165 and hold for 5 minutes (Once it hits 160, turn heat down).
5.
Take out grains and bring to a boil.
6.
Add 3.15 lbs P-Malt at 60 minutes (start of boil).
7.
Add 1.0 lbs P-DME at 30 minutes into boil.
8.
Add sugar and Irish Moss at at 10 left of boil.
9.
Flame out and let sit for 20 minutes to meld flavors.
10.
Chill down with wort chiller (100 F). Add chilled wort to fermentation bucket and bring to volume.
11.
Added air with pump for 10 minutes (sterilized).
12.
Pitch yeast 1 hour later.
13.
(12/16/18) Transferred to secondary.
14.
(12/21/18) Dry Hop Schedule: 1.5 oz each (Azacca, Simcoe and El Dorado) when in the secondary.
15.
(12/29/18) after 2 weeks in secondary.
