Special Instructions

1.
Prepare Yeast primer (3 days before - optional as using dried yeast)
2.
14.75 litres of strike water into Grainfather
3.
Add malt & 100g rice husks to water in batches and stir in carefully
4.
Leave malt in at 66oC for mash period - 90mins
5.
Prepare 16.5 litres of sparge water - 80-85 oC
6.
After mash, sparge with 16.5 litres of water. Add pH ~20g Stabiliser
7.
Add bittering hops (35g Centennial) and appropriate water treatment, then boil for 90 minutes
8.
At 80 minute mark, add: 3g Irish Moss, 20g Mandarina Bavaria, 5g Mosaic & 5g Citra hops
9.
Top up to 23 litres with cold water and confirm pH is ~5.3
10.
Aerate wort with paddle
11.
Syphon into fermenter, allow for splashing to aerate, keep temperature 20-25?C, if possible.
12.
Note hydrometer reading for wort, then pitch the yeast.
13.
After 5-7 days, add aroma hops: 30g Mandarina Bavaria, 10g Citra & 10g Mosaic. Leave for 20-30 minutes
