Special Instructions

1.
Create a 3L yeast starter with 2 vials
2.
Collect 14.8 gallons of water. Add 10g Calcium Carbonate, 4.8g Gypsum, 2g Calcium Chloride.

Mash with 7 gallons of 170F strike water. Mash at 152F for 60 minutes.
4.
Add 1 gallon of 212F water to bring mash to 170F. Vourlauf until wort runs clear.
5.
After run off, add 6.8 gallons of 170-175F water to mash out at 170F for 30 minutes.

Pre-Boil volume should be 12 gallons. Boil adding hops as scheduled and spices at 15 minutes.

Chill to 68F and ferment as follows:

68F for day 1-2

70F for day 3
10.
72F for day 4-21 of primary. After Day 21 transfer to kegs.

72F for day 22-34 in keg
12.
37F for day 35-70 in keg (crash cool / lager conditioning bringing temp down 3F per day)

Notes:

Follow up...this recipe won 2nd place in the Belgian/French Ale Category at the Chattanooga Home Brew Competition. I'm not too upset with the 2nd place finish as my Saison won 1st place in the same category.

Notes:

Great beer. Recipe I brewed used Aromatic malt. I have since changed it to Caraaroma which I feel is what is used by Ommegang. The color was a little light with the Armatic Malt.
