Special Instructions
1.Heat 7.5 gallons of water to 127 F, add grain and rest at 122 F for 10 minutes.
2.Decoction: Heat to 2.5 gallons of mash to boil and add back to rest of mash (targeting 149°F) and hold for 30 minutes.
3.Decoction: Heat 1.25 gallons of mash to boil and add back to rest of mash (targeting 158° F) and rest for 30 minutes.
4.Heat to 168 F and rest for 10 minutes.
5.Remove grain and let it drip back into pot while bringing to boil.
6.Proceed with 60 minute boil.
7.Stored in primary at 61 F for 5 days, 2 days at 68 F.
8.Transferred to secondary and lagered for 2 months at 40 F.
