Strike temp: 160F, Strike volume: 3 gal, Grain Temp: 80F, Mash temp: 152F for 60mins. Sparge water: 4.5 gal @ 186F brought mash temp to 168. Pre boil: Brix 8.8, Volume 6.25 gal. Final Post Boil: Brix 11 at 5 gal. Ran wort chiller till temp leveled out at ~80F. Transferred 5 gallons to fermenter and placed in fermentation chiller (chiller set to 68F /- .7). Pitched 1 packets of yeast at 80F. Added 2oz simcoe hops at 9 days. Bottled kegged after 13 days. FG 1.006.
