Special Instructions
1.Heat 16 qt strike water to 170F; add w/ grain to mash tun, stir to equilibrate temp. and l leave lid off til 153F then cover for 1 hr saccharification rest.
2.Collect and measure wort while heating 4.75 gal (19 qt) sparge water to 179F.
3.Batch or fly sparge till collect a total of 6.75 gal wort
4.Boil for 60 minutes, adding hops as indicated
5.Add Whirlfloc tablet and chiller to boil pot at 10 minutes
6.Chill to 68F, aerate wort, pitch yeast
7.Ferment 68-70F; 7d primary, 14d secondary; add dry hops at 7 d in secondary
8.Rack to secondary at 63-68 degrees for 2 weeks; dry hop last week
9.Prime with 4.5 oz corn sugar, bottle and carbonate at 70F for 9 days
