Special Instructions

1.
Mash water start with 10 qts at 130 deg. This should drop to 122 deg when grain added. Hold at 122 deg for 30 min.
2.
Add 5 qt water at 200 deg. This should raise mash temp to 150 deg. Hold for 10 min.
3.
Add heat and raise to 158 deg. Hold for 20-30 min. Check conversion with iodine.
4.
Sparge at 170 deg F. Amount sparge water should use 5 gallons place sparge in bottom tun 3" above false bottom. Add mash water mash etc keep mask floating always a little water above. Sparge with remaining water.
5.
Boil for 60 min final vloume should be 5.5 gal.
