Special Instructions

1.
The day before brewing get yeast starter going. ____/____/____@_____:_____.
2.
Brew Day- ____/____/____@_____:_____.
3.
Mash grains at 152° for 60min with 18 qts water, mashout at 170° with 15 qts water till you to get 6.5 Gal(26 qts) in brew kettle with .5 oz Sterling hops as FWH.
4.
Take a Perboil gravity reading (PB _______°/PG_________).
5.
Bring to a boil and add other .5 oz Sterling. write down time, this is time A (_____:_____).
6.
At (A plus 30min=____:____) add 1oz Centennial.
7.
At (A plus 40min=____:____) put in wort chiller.
8.
At (A plus 50min=____:____) add 1oz Centennial, Irish Moss & Yeast Nutrient.
9.
At (A plus 60min=____:____) Flame Out and add 1oz Centennial. Steep 10min then start chiller.
10.
When temp is around 75°-80° take chiller out and whirlpool. let sit for 15min then start to drain off.
11.
Take gravity reading (OB_______°/________), aerate.
12.
Pitch Yeast (_____:_____).
13.
Once yeast is going good add in 1oz Centennial.
14.
Rack Day ____/____/____. Gravity reading RB______°/RG_______. Put 1oz Centennial in secondary and rack on to it. Ferment 2 weeks
15.
Bottling Day ____/____/____. Final Gravity FB______°/FG_______. (ABV-______%)

Notes:

12oz bottle poured into a Shaker at 45°. Color is a nice copper with a slight haze, mellow carbonation and a thin white head. Aroma is hoppy with mellow citrus and a touch of pine. It has a medium body with a light smooth mouth feel. Flavor is malty with light biscuit notes and hop spice give some citrus and an even bitterness. Aftertaste is clean with the bitterness and a some of the citrus holding on. Overall it's a nice easy drinking brew but a little boring. My Leftover IPA made with the Mosaic came out much better.
