Add flameout hops at less than 85 C, start a whirlpool and let them whirl for 20 min. After putting the first 8 litres into the fermenter heat 3 litre of water and mix with 2.5 kg of dme . Then add this dme-mix to the fermenter and it should bump up the abv to 4.8% without harming the extraction of oils from the hops.
