Hit 67C, 45 minute mash.

Sparged with 18.92L, 3.5g CaCl2, 3g CaSO4, and 7ml lactic.

Jan 5/24 noon: Pitched into 22.8C wort, into FC set to 21C.

Jan 6/24 430PM: Laser beer at 21.1C, set FC to 16.5C.
6.
Jan 7/24 5pm: Laser beer at 16.7C. Proud krausen.
7.
Jan 10/24 7am: Laser beer at 16.9C, still a big rocky krausen. FC up to 20C, fermentation seems to be slowing.
8.
Jan 12/25 7pm: Added 1oz Centennial and FC to 21.5C to finish.
9.
Jan 16/25 4pm: No more bubbling. Into FC set to 0C to chill. 22C highest temperature hit.
10.
Jan 26/25: Bottling day! added 5.2oz dextrose to 19.5L at 22C for 2.67 volumes
