Special Instructions

buy 5 gallons of filtered water - boil 3.5 gallons

rack onto cold filtered water in the water jug

Add blow off tube and put in cooler with water and an ice bottle. Keep under 70F until 7 fermentation slows to 6 bubbles per minute.

Ferment in carboy at 70F until 7 bubbles per minute. Remove from cooler. Transfer to keg and set spunding valve at 20 psi for about 8 hours. Put output tube in water to see gas flow Set spunding valve at 35 psi for 2.7 volumes at 75F..
5.
Allow to ferment to 35 psi and let bubbles come to a complete stop at that pressure. Put in fridge set to 36F, allow to fully cool, and set CO2 at 6 psi
