Special Instructions

1.
Steep grains for 20 minutes in a muslin bag when the water is about 160F
2.
Remove bag and let drain but do not squeeze the bag
3.
Begin the boil and get the wort into a gentle rolling boil
4.
Slowly add the Liquid Malt Extract, stirring as you pour
5.
Add the Lactose and Maltodextrin slowly, stirring constantly
6.
Slowly pour in the Milk Chocolate chips, stirring so they get stuck to the bottom
7.
Allow the wort to return to a gentle rolling boil
8.
Add 1oz of Cluster Hops and boil for 30 minutes
9.
add 1oz of Fuggle Hops and boil for 30 minutes
10.
End the boil and chill the wort to 70 degrees
11.
While the wort is cooling, prepare your Wyeast. This step takes 3 hours.
12.
Transfer your wort into the fermenting container and add water till you are at 5 gallons
13.
Gently mix the wort and fresh water with a sanitized spoon
14.
Keep the fermentation container in a temperature between 60 - 70 degrees F
15.
Slowly introduce your yeast into your fermenting container and seal
16.
Rinse and pit your fresh cherries and place the cut pieces in a freezer safe bag
17.
Freeze the cherries for at least 24 hours
18.
Allow Fermentation to complete, this can take from 1 to 2 weeks
19.
Remove the cherries and let thaw
20.
place the cherries in a small pot, cover with a small amount of water where they are covered
21.
heat the mixture to 170F for 30 minutes, do not boil
22.
Let the mixture cool
23.
Pour the cherry mixture into your sanitized secondary fermentation container
24.
Transfer your fermented beer into the secondary container over the cherries
25.
Allow the mixture to sit for at least 1 week in a temperature controlled environment
26.
Cold Crash the last 24 to 48 hours if desired for clarity
27.
Transfer the beer to the keg, try to not get debris into the final product
28.
Add 3 tablespoons of vanilla to the mixture and gently stir with a sanitized spoon
