Mash Steps

Special Instructions

1.
Steep specialty grains in mesh bag at 165F for 30 min.
2.
Specialty grains lift out of brew kettle and pour 165F water over bag. Set aside specialty grains.
3.
Add LME to brew kettle, stir, and turn on heat. Allow wort to heat to at least 165F to sterilize and dissolve LME.
4.
Cool wort to 80-90 degrees F. Transfer to sterilized fermenting carboy or bucket.
5.
Add WLP672 Lactobacillus brevis to fermenter and allow to sit for 3-4 days, keep at 80F minimum
6.
Transfer back to brew pot, boil and follow brew schedule above. Ferment for 7 days.
7.
Crush and sanitize 16oz of fresh raspberries by bringing above 150F for 10min, or by grinding in a blender 1C vodka
8.
(can rack to secondary here but not required). Add dry hops and raspberries to fermenter.
9.
Allow to sit for 7 days before kegging or bottling
