1.Milling:
2.Mill millet using gap setting of 0.65 – 0.70 mm (.026" - .028")
3.Mill buckwheat using gap settings of 1.66 - 1.67 mm (.035" - .037")
4.Mash:
5.Bring 95 gallons of water to ~172F (70 gallons [1.5qt water/1lb grain] 25 gal [false bottom space])
6.Add room temp grain/rice hulls and stir
7.check mash temp (~160F)
8.Add 323.4 ml of SEBAmyl 100 & 323.4 ml of SEBAmyl L
9.Hold mash @ 161F for 120 minutes
10.Prepare sparge water @ 168F
11.As wort is collected, pour sparge water over grain to get desired boil volume
