2/18/17 Started yeast at 9:00pm. 1000mL @ 1.062 with 1pk Safale S-04 on stir plate. 2/19/17 Started smoking the malt around 8:00am. At 10:45 put water on and put malt on at 11:00 to steep for about 25min. I didn't have a malt sack so I had to strain off the malt and rinse it in the strainer with the other gallon of water. Got it back up to boil at 11:50 and added LME. Followed Instructions listed, all went well with an O.G. of 1.0676. Did a slow cool down and pitched yeast at 6:00 pm. I think I my have used too much coffee, it seems to be the dominant aroma coming off it at this time. But it is the last thing I put in at flame out 2/20/17 Very active and it got going fast. Looks good and smells good but aroma coming off the air lock seems to lean on the hops. 2/24/17 All activity has stop, wort is clearing well. Will rack tonight or tomorrow. 2/26/17 Rack Day - Brix is now 8.75 this is about 1.015 gravity. So it looks like it worked out just right. Aroma at this time is sweet and smoky. Flavor is the same, the smoke stands out and there is a nice bitterness in the back keeping the sweetness in place. The smoke came out stronger then I thought it would. When I smoked the grain it didn't seem to have picked up much but it work very well. 3/4/17 Bottling day, primed with 5.5 oz corn sugar. Net of 652oz. (4.9 Gal), 4@22oz. & 47@12oz.

Notes:

Color is black with good carbonation and a thick rocky brown head. Aroma is dry nutty and roasted with coffee and just a hint of smoke in the back. It has a bold medium that gives a creamy mouth feel. Flavor is big deep roasted coffee and a little nutty taste. There seems to be a note of sweetness and just a hint of smoke. In the after taste the coffee bowls over everything with an almost harsh bitterness. So in the end I way over did the coffee, it dominates the flavor and covers the smoke, vanilla and maple completely. Overall it's drinkable and I kind of like it, but it's not even close to what I wanted. I'll need to rework it to get a little closer to what I want out of it.
